I made a fantastic salad the other night. It was light and refreshing and hit the spot. Let me 1st list the ingredients.chopped hearts of romainepeeled and diced seedless cucumberdiced avocadosliced in half cherry tomatoesdiced irish white cheddarfresh peasfresh endamame beanstamari vinaigrette (I'll tell you how I made it below)I have not listed any quantites because I always find that people like different amounts of ingredients in the their salds. Some like more lettuce than anything else whereas, some, like me, prefer a lot of goodies in their salad.To make the tamari vinaigrette I took 1 ounce of tamari, 2 ounces of balsamic, the juice of one lemon, 2 tablespoons of dijon mustard and mixed that together then drizzled in about 2 ounces extra virgin olive oil while whisking to incorporate. I finished it off with a little salt and fresh ground pepper. I also added a little salt and a good bit of fresh ground pepper to the salad.Toss it all in a bowl and enjoy it with some warm buttered bread.You could also add grilled chicken, roast chicken, grilled shrimp, grilled sea scallops or sautéed bay scallops, sliced filet mignon for a more substantial salad. Yum!
